1 tbsp. olive oil
½ tsp. cumin seeds
1 medium red onion, chopped
4 cloves garlic, finely chopped
1-inch piece ginger, finely chopped
1 green chili, finely chopped
2 large tomatoes, chopped
½ tsp. turmeric powder
1 tsp. coriander powder
¼ tsp. garam masala
1 tsp. salt
1 cup dried black-eyed peas, soaked in water for 3 hours, drained
2 cups water
3 cups kale, chopped
2 tsps. lime juice
Press the Sauté button on the Instant Pot. Add the oil and the cumin seeds and let them sizzle for a few seconds.
Add the onion and sauté for 2 minutes or until soft. Add the garlic, ginger and green chili and sauté for 1 minute or until golden brown.
Add the tomatoes and cook for 3 minutes, or until soft. Add the turmeric powder, coriander powder, garam masala and salt.
Cook for 1 minute. Fold in the black-eyed peas and water. Lock the lid. Press the Manual button and set the timer for 20 minutes on High Pressure.
When timer beeps, let the pressure release naturally for 10 minutes, then release any remaining pressure.
Open the pot and press the Sauté button. Add the kale and simmer for 3 minutes. Stir in the lime juice and serve.
