Prep time: 5 minutes, Cook time: 15 minutes, Serves 6

Ingredients :

¹⁄₃ cup dried brown lentils

2 tbsps. vegetable oil

1 large yellow onion, sliced

1 tsp. kosher salt, or more to taste

1 cup basmati rice, rinsed and drained

½ tsp. ground cumin

½ tsp. ground coriander

2 cups water

Directions : 

Place the lentils in a small bowl. Cover with hot water and soak for 15 to 20 minutes, then drain. Press the Sauté button on the Instant Pot and heat the oil.

Add the onion and season with a little salt and cook, stirring, until the onions begin to crisp around the edges but are not burned, 5 to 10 minutes.

Remove half the onions from the pot and reserve as a garnish. Add the soaked lentils, rice, cumin, coriander, salt, and water, stirring well.

Lock the lid. Select the Manual mode and set the cooking time for 6 minutes at High Pressure.

When the timer beeps, perform a natural pressure release for 10 minutes, then release any remaining pressure.

Carefully remove the lid. Transfer to a serving dish. Sprinkle with the reserved cooked onions and serve.
