Prep time: 5 minutes, Cook time: 14 minutes, Serves 2

Ingredients : 

½ cup steel-cut oats

1½ cups water

¼ cup maple syrup, plus additional as needed

2 tbsps. packed brown sugar

¼ tsp. ground cinnamon

Pinch kosher salt, plus additional as needed

1 tbsp. unsalted butter

Directions : 

Press the Sauté button on the Instant Pot. Add the steel-cut oats and toast for about 2 minutes, stirring occasionally.

Add the water, ¼ cup of maple syrup, brown sugar, cinnamon, and pinch salt to the Instant Pot and stir well. Lock the lid.

Select the Manual mode and set the cooking time for 12 minutes at High Pressure.

Once cooking is complete, do a natural pressure release for 10 minutes, then release any remaining pressure.

Carefully open the lid. Stir the oatmeal and taste, adding additional maple syrup or salt as needed. Let the oatmeal sit for 10 minutes.

When ready, add the butter and stir well. Ladle into bowls and serve immediately.
