2 tbsps. honey
¼ cup shredded coconut
1 plum, pitted and chopped
3 tbsps. coconut oil, divided
1 apple, cored and chopped
In the Instant Pot, combine the plum with apple, half of the coconut oil, and honey, and blend well.
Lock the lid. Select the Manual mode and cook for 10 minutes at High Pressure.
Once cooking is complete, do a quick pressure release.
Carefully open the lid. Transfer the mixture to bowls and clean your Instant Pot. Set your Instant Pot to Sauté and heat the remaining coconut oil.
Add the coconut, stir, and toast for 5 minutes.
Sprinkle the coconut over fruit mixture and serve.
