4 bacon strips, chopped
1 tbsp. canola or coconut oil
2 large sweet potatoes, peeled and cut into ½-inch pieces
1 cup water
2 cups cubed fresh pineapple
½ tsp. salt
¼ tsp. paprika
¼ tsp. chili powder
¼ tsp. pepper
⅛ tsp. ground cinnamon
Press the Sauté button on the Instant Pot and add the bacon. Cook for about 7 minutes, stirring occasionally, or until crisp.
Remove the bacon with a slotted spoon and drain on paper towels. Set aside. In the Instant Pot, heat the oil until it shimmers.
Working in batches, add the sweet potatoes to the pot and brown each side for 3 to 4 minutes. Transfer the sweet potatoes to a large bowl and set aside.
Pour the water into the pot and cook for 1 minute, stirring to loosen browned bits from pan. Place a steamer basket in the Instant Pot.
Add the pineapple, salt, paprika, chili powder, pepper, and cinnamon to the large bowl of sweet potatoes and toss well, then transfer the mixture to the steamer basket.
Secure the lid. Select the Steam mode and set the cooking time for 2 minutes at High Pressure. Once cooking is complete, do a quick pressure release. Carefully open the lid. Top with the bacon and serve on a plate.
